As long as you don’t turn the oven off in the middle of baking, this will be some awesome banana bread! I promise.
Ingredients:
- 3 or 4 smashed ripe bananas
- 1/3 cup melted butter
- 3/4 cup of sugar
- 1 beaten egg
- 1 tsp vanilla
- 1 tsp baking soda
- pinch of salt
- 1 1/2 cups of all purpose flour
- 1/4 cup of chopped walnuts (optional)
- 1/4 cup of semi sweet baking chocolate (optional)
Method:
- preheat oven to 350°
- use wooden spoon to mix butter into bananas
- mix in sugar, egg and vanilla
- sprinkle in baking soda and salt, then mix
- add flour last
- pour into 4in x 8in loaf pan
- bake for 1 hour
- cool on rack, remove, slice and serve
So, for some reason I only have 5in x 9in pans. I use one of those and bake for about 1 hr and 20 mins. I poke a shish kabob skewer in the middle and see if it comes out clean. When it does, it is ready.

This is by far THE best banana bread! I love it when my wife makes it, and it’s so easy! Giving little pans of it to people as small gifts is the funnest part too. We gave some to our kids teachers and the loved it!

You can also make cupcakes; however, for cup cakes and small pans, shorten the time from the recipe. I would suggest checking cupcakes after 40 minutes and the small pans after 1 hr. Make sure they pass the ‘clean toothpick’ test before removing from the oven.

I LOVE LOVE LOVE BANANA BREAD!!!I am pleased as peaches that you put the walnuts as optional..I couldve left them out on my own, however, that type of complication is not welcome in my life. I would appreciate a good meatloaf recipe next please.. Thank you, your biggest (metaphorically)fan.
